This handcrafted end grain cutting board is made of Cherry and Walnut.  It sits on small rubber feet to keep it off the counter and/or table top and is finished with a mixture of  food safe non-hardening oils and waxes.

How to maintain your cutting board

 

The best way to maintain your cutting board is to clean it after use and reseal it monthly with an oil/wax combination. After use, scrape your board clean, and then rinse with hot soapy water. Never submerge in water and never put it in the dishwasher. While the glue is water-resistant, water washes away the oils and waxes that protect your board.

 

To remove odors, you can use either lemon juice or vinegar to clean surface. Letting the lemon juice or vinegar sit for a few hours can remove most stubborn odors. Wipe off clean then reseal board.

 

To reseal your cutting board, we recommend a non-hardening oil, either mineral or fractionated coconut oil (vegan-friendly), combined with bee or plant-based waxes. This will provide an effective sealing agent that helps repel water but doesn’t make the board waterproof. Always avoid using vegetable oils, like olive oil, that can turn rancid quickly and cause an undesirable odor. Walnut, almond, or pure tung oil can also be used to reseal your board, and indeed they tend to penetrate the surface deeper and harden the board, but they should not be used if you cook for someone with a tree nut allergy

 

You can make your own dressing or buy a commercially available coating. We also sell two toppings for resealing cutting boards, one containing mineral oil and beeswax, the other a vegan-friendly, plant-based mixture.

    Grain orientation

     

    When selecting a handcrafted cutting board, a key consideration is grain orientation.  We offer flat and end grain cutting boards.  Flat grain cutting boards highlights the grain pattern and beauty of the wood. Since they are more decorative than durable, they make fabulous cheese and bread boards.  

     

    End-grain cutting boards are considered by most food professionals to be the better choice for chopping and cutting. Because the grain orientation is vertical, these cutting boards are kind to knife edges, more scratch-resistant, and self-healing as the wood actually separates and closes after chopping and cutting. With heavy regular use, this type of cutting board retains its beauty and appearance much longer than flat-grain varieties, which tend to scratch more easily because the wood fibers are being chopped and strained with each use. 

     

    Wood selection

     

    Cutting boards require dense, hard woods with fine closed grains to keep liquids and bacteria from entering the board. Many woods, including hard maple, which is used extensively in commercial kitchens, have a natural protection against contamination. Consequently, a well-maintained wood cutting board is not only beautiful but naturally sanitary. For color variation and grain patterns, our cutting boards are made from hard maple, walnut, cherry, and purpleheart.
